VISIT IN DAIRY FARMHOUSES

Welcomed by the Casaro Master You will experience the thrill of creating Pampanella, a cheese produced since 1700. Made with cow’s milk, it owes its name to the pampino or pampano, the fig leaf in which it is served. The milk is coagulated with natural rennet, the latex of the fig, which gives the cheese its characteristic aroma and a pleasantly bitter taste. You will conclude the experience with the tasting of the product and a visit to the “Botteg”, an assalult on all your senses, a joy of cheeses, caciotte, caciocavalli, ricotta, mozzarella and much more, with a thousand flavours and shapes, flavoured in the most imaginative and refined way.

A dish that boasts ancient origins, and was used to use old legumes so that to make place to the new crop. Ciceri and tria are a first course based on chickpeas and wheat semolina pasta. The pasta sheet is partly fried and partly boiled and combined with chickpeas cooked with extra virgin olive oil, garlic, onion and herbs. It is a very ancient dish, the Latin poet Horace already mentioned it in his Satires, written between 30 and 35 BC. The term tria, on the other hand, derives from Arabic and has spread both in Sicily and in Salento and indicates dry, fried pasta. The use of this recipe is also linked to a long popular tradition, according to which during the celebrations for the feast of St. Joseph, long tables were set up and large quantities of this dish were prepared to be offered to the poor of the town. A hands-on cooking class will teach you how to make this specialty and taste the result of your work. This experience will immerse you in the fantastic world of Salento spontaneous plants, which you will slowly discover along a short walk between fields, stones, dry stone walls and pages of the organic farm.

Precious glimpses of Mediterranean scrub sprout from the vast grazing and sowing lands, which you will experience by listening to curious stories and activating your five senses, amidst unexpected scents and tales linked to the Salento peasant tradition.

It is precisely in these places that the aromatic plants are harvested , those which make some of the farm’s organic cheeses unique.

The guided plant-hunting tour will end with the tasting of a selection of cheeses curated by Lina, paired with alcoholic and non-alcoholic herbal cocktails specially designed by the bartender, to enhance their aromas and tastes.
